This celery is a powerhouse of green energy, high in bone building silica. Use the whole stalk – including the leaves and seeds. This is nothing like grocery store celery with its vibrant green stalks and leaves. I add it to my juicing to bring silica in for bones and hair. It is a must for soups, egg and tuna salads, etc. It is easy to grow year round and the seeds of this bi-annual plant are great in potato salads. I use the dried leaves in my herb blend and they are great in winter soups. You can blanch them ,which gives a mild flavor by planting them in trenches and hilling them.
